Now I have seen it I think that it was ridiculous for them even to mention jelly.... it's impossible to do a pie with jelly in less than 2 days as the pie needs to chill completely or the partly set jelly just turns back into a liquid and leaks out of the pie making the pastry soggy. My first effort was a bit of a disaster cos I didn't allow it to chill properly before adding the jelly. Now I make them a couple of days in advance and make sure they are properly chilled in the fridge before I add the jelly which I make with chicken stock, white wine, gelatine and herbs. I allow the jelly to cool quite a bit then sieve it through a sieve lined with muslin to ensure a clear jelly. Then you have to have patience and add it a little at a time putting the pie back in the fridge to chill again in between. You can always "unset" the jelly still to be poured by a few seconds in the microwave. My fave recipe is pork/sage/apple mixture at the bottom, a layer of dried apricots, a layer of chicken breasts, a layer of prunes and then top it all off with the pork mixture!
